A super food, for a super soup! Watercress is truly good for you, it bursts with vitamins and minerals, and has a great taste.
This soup recipe is very easy to prepare and makes the perfect starter or lunch, enjoy!
- Olive Oil - 2 tbsp.
- White Onion - 1, finely chopped
- Potatoes - 3, medium potatoes roughly chopped
- Watercress - 2 bags (120g, 4.5 ounces
- Vegetable or Chicken Stock - 1L/ 4 cups
- Salt & Pepper - To Season
Heat the olive oil on medium heat in your stockpot. Fry the onion until soft but not browned.
Add the chopped potatoes and stock, and bring to boil. Once boiling reduce the heat and simmer covered for 20 minutes or until the potatoes are nearly soft. Now add the watercress and simmer for 5 more minutes.
Turn off the heat and let the soup cool down for a few minutes. Then purée the ingredients with a hand blender in the stockpot or puree in batches in your blender.
Return the soup to a clean pan, season with salt and pepper and heat through without boiling en serve with a crusty piece of bread.
