One of the great things about this elegant soup is the fact that you can probably find all the ingredients in your kitchen, without even having to shop for it.
It's a perfect starter to serve when you are getting unexpected guest or are simply in a time squeeze, but do want to serve something which sounds very sophisticated and tastes delicious too!
- Artichoke Hearts in Water - 3 cans
- Potato - 1, diced
- White Onion - 1, finely chopped
- Garlic - 1 clove, finely chopped
- Chicken Stock - 1L/ 4 cups
- Alpro Soya (light) for cooking - 250 ml/ 1 cup
- White Pepper -
Drain and rinse the canned artichoke hearts, finely chop the onion and garlic.
Heat the olive oil on medium heat in your stockpot. Sauté the onion and when about done add the garlic. Once translucent add the artichoke hearts and the diced potato.
Pour in your chicken stock, bring to boil and cover. Once boiling reduce the heat and simmer for 25 minutes or until the potato and artichoke hearts are tender.
Turn off the heat and let the soup cool down for a few minutes. Then purée the ingredients with a hand blender in the stockpot or puree in batches in your blender. Once done add the Alpro Soya, season with some white pepper and heat through without boiling.
