To get through the month of January in good health, I figured the Portuguese superfood soup "Caldo Verde' might just do the trick. This delicious and healthy soup is very popular in the Portuguese cuisine and often served during celebrations.
- Kale - 300g / 10 oz.
- Potatoes - 450g / 1 lb.
- White Onion - 1, large and minced
- Garlic - 2 cloves, minced
- Bay Leave - 1
- Beef Salami - 225g/ 0.5 lb., in small dices (I love Blooms kosher salami)
- Chicken Stock - 1.5L / 6 cups
- Salt & Pepper - to taste
Fry the salami dices and brown in the stockpot (without any oil) on all sides. Remove the salami cubes from the stockpot and drain the meat on a paper towel and set aside. Saute the onions and garlic in the rendered fat, till translucent. Then add the diced potatoes, kale and bay leave.
Pour in your chicken stock, bring to boil and cover. Once boiling reduce the heat and simmer for 20 minutes or until the potato and and kale is tender.
Turn off the heat and let the soup cool down for a few minutes. Remove the bay leave, purée the ingredients with a hand blender in the stockpot or puree in batches in your blender. Once done, add the salami cubes, season with some white pepper and heat through without boiling.
