Looking for a quick, healthy and success guaranteed recipe? Then look no further! This broccoli, pea and basil soup is ready within 30 minutes. Broccoli and peas always go well together but the basil does the trick and gives it extra depth, aroma and flavour.
- Broccoli - 1 head, cut into florets
- Peas - 2 cups/ 280g
- Basil - 2 oz/ 50g, use leaves and stems
- Red Onion - 1, finely chopped
- Garlic - 2 cloves, finely chopped
- Salt & Pepper - To season
- Olive Oil - 2 tbsp.
- Vegetable Stock - 4 cups/ 1L
Heat the olive oil on medium heat in your stockpot. Fry the onions until translucent and add the garlic, peas, broccoli florets and basil. Cover the ingredients and stir occasionally for about 7 minutes.
Pour in your stock and bring to boil. Once boiling reduce the heat and simmer covered for 20 minutes or until the broccoli is very tender.
Turn off the heat and let the soup cool down for a few minutes. Then purée the ingredients with a hand blender in the stockpot or puree in batches in your blender but leave a bit of texture.
Return the soup to a clean pan, season with salt and pepper and heat through without boiling. Very tasty to serve with some with some homemade croutons.
